Cheese Scones

This is a very standard recipe for scones. You can use any firm/hard cheese you like as well as other herbs such ass Dill, Thyme, Chives etc…

2 Cups All Purpose Flour

2 Teaspoons Baking Powder

½ Teaspoon Sea Salt

¾ Stick Unsalted Butter, cubed and frozen

1 Cup Cheddar Cheese

2 Tablespoon finely chopped Green Onion

¾ Cup Buttermilk*(see note)

Melted butter and some cheese for topping scones

Directions:

  1. Pre heat oven to 395F
  2. Combine flour, baking powder and salt in a food processor, pulse to combine
  3. Add frozen butter and pulse until pea sized chunks form
  4. Pour flour butter mixture into a bowl*(see note)
  5. Add cheese and green onions to flour mixture and toss together
  6. Add milk, mix until just comes together
  7. Turn out onto a light floured surface and gently form into circle about 1 inch thick, cut into triangles with pastry cutter
  8. Place on baking sheet lined with parchment a couple of inches apart
  9. Brush with butter, sprinkle with cheese and bake for 15-20 mins.
  10. Serve warm

Note(s):

*If you don’t have buttermilk, use ¾ whole milk, less 1 teaspoon, and add 1 teaspoon of white vinegar, let sit for a couple of minutes.

*If you use a food processor for this portion, there is a chance of over mixing which will make the scones tough. You can also do this step by hand with your fingers or a pastry cutter.
